Christmas Cookie Recipes (2020)

Christmas Pinwheel cookies may be difficult to make, but they are worth it.

Today, I’m here to share with you some amazing and easy Christmas cookie recipes that you won’t want to miss out on trying this year. These are fun to make on those days when you are stuck inside because of the cold weather outside.

The first recipe I highly recommend trying is just plain sugar cookies. These cookies have always been one of my personal favorites. All you will need to make these cookies are 3 cups of all-purpose flour, 1 tsp. Baking powder, ½ tsp. kosher salt, 2 sticks of butter, 1 cup of granulated sugar, 1 egg, 1 tsp. pure vanilla extract, and 1 tbsp. milk. This recipe makes about two dozen cookies. You will need to start by whisking together the flour, baking powder, and salt in a large bowl. Then, set that aside. In a separate bowl, you will need to beat the butter and sugar until it’s fluffy and pale in color. It makes things easier if you leave the butter set out until it’s soft. Next, add the egg, milk, and vanilla to the mixture and beat until it’s mixed together. While you are beating the mixture, gradually add the flour mixture to it until it’s totally combined. Flatten the mixture out into the shape of a circle and wrap with plastic wrap. It will need to be refrigerated for one hour. After the hour is up, preheat your oven to 350 degrees. Now, you are ready to roll out the dough and cut it into shapes. Make sure you have a clean work surface. Lightly flour the area before you roll out the dough. I like to line my baking sheets with parchment paper before setting the cookies on them. The cookies take around 8 to 10 minutes to bake until the edges are lightly golden. You’ll find that this recipe is so easy to make and would be fun to make with your family.

A cookie recipe that I have never tried, but sounds delicious is Reese’s Chip cookies. This recipe makes about forty cookies. You will need 2 ¼ flour, 1 tsp. Baking soda, ½ tsp. kosher salt, ¾ cup butter, ¾ cup granulated sugar, ¾ cup brown sugar, ½ cup peanut butter, 2 eggs, 1 tsp. vanilla extract, 1 cup semisweet chocolate chips, ½ cup peanut butter chips, and 1 cup Reese’s Minis Peanut Butter Cups. The Peanut Butter Cups will need to be cut into halves. You will need to preheat your oven to 350 degrees. Line two baking sheets with parchment paper. Start by whisking together the flour, baking soda, and salt. Then set that aside. In another bowl, beat together the butter and sugars until light and fluffy. Add the peanut butter to the mixture and mix together. Add the eggs one at a time, and then add the vanilla extract. Gradually add the flour mixture until it’s mixed together. Fold the chocolate chips, peanut butter chips, and mini peanut butter cups into the mixture using a rubber spatula. Form dough into 2-inch balls and set onto baking sheets. The cookies take around 10 to 12 minutes to bake until golden brown.  

  The last cookie recipe I will be sharing with you is Christmas Pinwheel cookies. This recipe is the most difficult out of the three I shared to make. The ingredients you will need to make these delicious cookies are 2 ¼ flour, 1 tsp. Baking powder, ½ tsp. Kosher salt, 2 sticks of butter (softened), 1 cup granulated sugar, 1 egg, ¾ tsp. almond extract, food coloring, and sprinkles. This recipe makes about two dozen cookies. Whisk together the flour, baking powder, and salt in a bowl. In a separate bowl, beat the butter and sugar together. Add the egg and the almond extract. Gradually add the flour mixture until it’s mixed together. Divide the dough into two. Leave one half of the dough in the mixing bowl. Add red food coloring to the dough and mix until the dough reaches the desired color. Shape each half of the dough into a ½ inch thick square. Wrap each dough square in plastic wrap and refrigerate for about 30 minutes. Place red dough between two sheets of parchment paper and roll into a rectangle. The rectangle should be ¼ inch thick. Do the same with the white dough. Take the top sheet of parchment paper off of each dough. Place the red dough on top of the white dough. The dough sides should be facing each other. Seal the two doughs together by pressing on them gently. Take the top parchment paper off. Trim the sides to match up evenly. Roll the dough tightly into a log. Roll the log on the counter a few minutes to help seal the edge. Wrap the log in plastic wrap and refrigerate for one hour. After the hour is over, preheat your oven to 350 degrees. Place parchment paper on baking sheets. Place sprinkles on a plate. Slice cookies into ½ inch thick slices and roll in sprinkles. Place the cookies on the sheets two inches apart. Bake the cookies for ten minutes until they turn golden.
